In an era dominated by high-speed extrusion machines and synthetic flavoring agents, Aurelia Sweets remains dedicated to the patient art of slow candy crafting. Founded in Green Mountain Valley, Vermont, our workshop utilizes restored 19th-century copper kettles and granite cooling tables.
When sugar syrup is cooked over open heat to precise soft-crack and hard-crack stages (300°F to 310°F), it undergoes natural caramelization reactions that mass factory production simply cannot replicate. Our master candy makers hand-pull every batch, folding in natural air bubbles that soften the density of the candy, creating a luxurious melt-in-mouth experience.
We source our lavender directly from organic farms in Washington state, our citrus oils from cold-pressed orchards in California, and our pure maple sugar directly from local Vermont sugarhouses.
